Four Weekly Wins in a colorful bowl of yum!

Loads of spinach, black beans, guacamole, sweet potatoes... dressed up with some salt, cumin, lime, jalapenos, and cheese... dinner doesn't get any easier!


Here's what you need: sweet potatoes, spinach, black beans, avocados (I used store-bought guacamole), grain (I used rice), salt, cumin, lime

Here's other stuff you can add: jalapenos, cheese, salsa, tomatoes, zucchini, cayenne pepper, or any other desired spices.


First, cube the sweet potatoes (or cut them however you'd like- the smaller, the quicker they cook), toss with avocado oil, salt, and cayenne pepper if you like things spicy. Put them in an oven that you preheated to 425F.


As the potatoes roast, add some olive oil and a full box of spinach to a pan. As it cooks down, add some salt and cumin, and then throw in a couple of cans of black beans (rinse them first).


When the beans are ready, add some freshly squeezed lime juice if you have it and turn off the heat.


Make your rice (or quinoa or whatever grain you prefer), and when that is done, your sweet potatoes are likely ready. Test them with a fork to see if they are soft inside.


You can add whatever else you'd like- sauteed zucchini goes nicely, though I didn't have zucchini at home when I made this. Some tomatoes or pico de gallo would add a nice kick. I added a dollop of guacamole and some grated cheddar cheese and voila... a colorful bowl of yum!
