If you spend an hour or so per week chopping and roasting a bunch of vegetables, you can store them in your fridge for easy access all week. Add them to salads, like you see here, or grain bowls, or just eat on their own, maybe dipped in homemade tzatziki sauce (just mix yogurt, salt, pepper and shredded cucumber and/or fresh garlic if you'd like). Add a hard boiled egg, or top with some nuts or seeds for some extra wins.
